It started with a decision — walk away from a corner office, a pension, and a predictable life. What followed was two years of apprenticeship, four trips to origin countries, one secondhand drum roaster, and a tiny garage in Southeast Portland.
We don't roast to a schedule. We roast to a sound — that first crack, sharp and clean. We roast to a color, checking each batch by hand. And we rest every bag for 72 hours before it ever leaves our shop, because good coffee doesn't rush.
